Epic Black Bean Burgers

Yoinked from Healthy Cooking, not sure which issue. I am trying to eat vegetarian at least 5 days a week. So far, it hasn’t been difficult. With recipes like this, it’s even easy to get my family on board. The kids loved it! Mike, on the other hand, would rather have a grilled piece of animal. Oh, well… 5 out of 6 ain’t bad.

2 cans (15 oz each) black beans, rinsed and drained
1 medium red onion, chopped
2 eggs, beaten
1/2 cup panko breadcrumbs
1/2 cup crushed baked tortilla chips (I didn’t have any, so I used Sun Chips)
1/3 cup chopped green pepper
1 tsp ground cumin
1 tsp chili powder (I used Ancho)
1/2 tsp hot pepper sauce
1/2 cup fat free mayo
4 tsp chopped green onion
4 tsp Dijon mustard
2 tsp honey
1 1/2 tsp orange juice
1/2 tsp soy sauce
6 slices unsweetened pineapple
6 whole wheat hamburger buns, split

1. Mash beans, add onion, eggs, breadcrumbs, chips, green pepper, cilantro, cumin, chili powder, and pepper sauce. Shape into 6 patties. Refrigerate for 1 hour.

2. In a small bowl, combine mayo, green onion, mustard, honey, orange juice, and soy sauce. Refrigerate until serving.

3. Coat grill rack with cooking spray before starting the grill. Grill burgers, covered, over medium heat for 3-5 minutes each side, or until thermometer reads 160*. Grill pineapple slices for 2-3 min each side, or until heated through and caramelized on the outside. Place burgers and pineapple on buns. Top each with a dollop of sauce.
